Bread Machine - Test Recipes

Objectives

I want to learn the basics of bread making.
I want to understand the purpose of each ingredient.
I want to create shorter, simpler recipes.
I want to make great tasting bread with healthy ingredients, like olive oil, but without white sugar.
I want to be able to create and modify recipes on the fly, making each recipe my own, adapting it both to my machine, and to my own taste.

Action Plan

Buy missing ingredients.
Make simple loaf first.
Gradually add complexity.
Try other machine settings.

This is my journal. Many of the recipes are OK. The 5 star recipes are the best.

Machine is set to Dough. Similar to #48. Smaller recipe, with all-purpose flour.

Toppings are spicy tomato sauce, 2 kinds of shredded cheese, pepperoni, and pineapple.

1/2 cup buckwheat flour
1 tsp bread machine yeast from a jar

Machine is set to Rapid, Medium. Darker color, subtle taste. Buckwheat is a pseudo cereal like amaranth and quinoa. Some people have allergies to buckwheat.

#48 Dale's 14" PIZZA!: * * * *

1 cup warm water
1 TBSP honey
2 TBSP extra virgin olive oil
3/4 tsp salt
1-1/2 cups bread flour
1/2 cup whole wheat flour
1/2 cup corn meal
1 tsp bread machine yeast from a jar

Machine is set to Dough. The dough was too elastic. The dough needs to rest for at least 30 minutes after it comes out of the machine, and I should have used all purpose flour instead of bread flour.

Toppings are spicy tomato sauce, 4 kinds of shredded cheese, pepperoni, and pineapple. Great taste. Ann thought the crust was too thick. That means there will be leftovers for breakfast!

Machine is set to Rapid, Light. Too dense, but has nice taste. Should have used semolina flour instead of semolina middlings.

Machine is set to Rapid, Medium. Made a trip to Northwinds Co-op yesterday and bought 1/2 cup each of cracked wheat flour, semolina, spelt flour, rice flour, corn meal, and buckwheat flour, all for $1.41 total. Nice and chewy.

Machine is set to Rapid, Light. Similar to #43. Nice taste. Small crust blow out, which is more likely when using the Rapid Bake setting. Next time, I'll use a little less salt. (That did solve the problem.)

Machine is set to Rapid, Light. Similar to #15. Yikes, 12 ingredients! The Rapid bake option solves a lot of problems. I'm having difficulty seeing any reason to use the 4 hour option anymore.

Machine is set to Basic Bread, Light. Similar to #23. Fell. Was it the milk powder? No, too much water. Tastes good. Dense, only 6 slices. Fine crumb.

1 TBSP extra virgin olive oil infused with vanilla
1-1/2 cups bread flour
1 cup whole wheat flour
1 tsp bread machine yeast from a jar

Even simpler than #29. Machine is set to Rapid, Medium. ZERO sugar, ZERO salt and ZERO milk powder test. Rose OK and tastes OK. This is the first time I tried the RAPID setting, which saved an hour. This 'simplest' bread is OK, but is more difficult to slice. Still, I got 8 slices.

Machine is set to Basic Bread, Medium. This version is similar to recipe # 19. Dense and disappointing. Tough crust, but easy to slice. This is the last quinoa loaf. I think quinoa is overrated. I gave away the remaining quinoa flour.

Machine is set to Basic Bread, Light. Very good. Best of the 3 PB recipes. Varying the amount of PB to 1/4, 1/3, and 1/2 cup didn't make very much difference.

Machine is set to Basic Bread, Light. Tastes good. The soy makes the dough smell for the first 30 minutes of kneading. Perhaps it is past its date.

Modified from #21. Machine is set to Basic Bread, Medium. After the last 3 loaves, I hypothesize that 1/2 to 3/4 tsp salt is the ideal amount for a properly rounded loaf top. This also tests whether milk powder can be substituted for sugar. This works!

Machine is set to Basic Bread, Light. Salt seems to affect the flatness or roundness of the loaf top. This time, I added a full tsp of salt. Top of loaf was too round. I hypothesize that the ideal amount of salt for this size loaf is 3/4 tsp.

I accidentally removed the loaf 20 minutes early, and it was plenty done. Slightly denser. Crust is harder. Excellent. I need to replenish the white bread flour and yeast.

1 cup dark rye flour
3 TBSP cocoa powder
1 tsp bread machine yeast from a jar

Omitted dry milk again. Machine is set to Whole Wheat, Light. OK. Is a little dry. Recipe probably needs a little more liquid or a little less solid because of the addition of cocoa. Nice subtle taste. Caraway seeds would have been nice.

2-1/2 cup bread flour
1/4 cup shredded Parmesan cheese
1/2 tsp garlic powder
1 tsp bread machine yeast from a jar

Good. Nice texture and taste. Could use more parmesan and garlic. This is my last all bread flour loaf. It's time to move on to more interesting recipes.

2-1/2 cup bread flour
1 tsp bread machine yeast from a jar

This experiment uses even fewer ingredients. I noticed during the last hour of baking that the yeast smell wasn't so overwhelming like it is with recipes that use more yeast. It is another good loaf.

1 TBSP extra virgin olive oil
1/2 tsp vinegar
1 tsp salt
1 TBSP dry milk, I wonder if I need this.
2-1/2 cup bread flour
1 tsp bread machine yeast from a jar

This experiment uses less of everything except water, flour, vinegar, and salt. Also, I set the machine to Light. This came out OK. It is easier and faster to measure than recipe number 7.

1-1/2 TBSP extra virgin olive oil
1/2 tsp vinegar

Used 0.30 kWh of power, or about 3 cents worth of electricity.
This came out very nice. Even though it is white bread, it has a nice golden color because of the molasses.

2 TBSP molasses

1/2 tsp vinegar
1 tsp salt

This recipe is modified from a bread-machine recipe that only uses whole wheat flour. My bread making is always an adventure, because I like to tinker. Ann can't stand to watch. She claims to strictly follow recipe directions. ;-) We'll see when she makes a loaf the old fashion way, maybe next week.
This is my best recipe yet. It is definitely a keeper. It rose nicely and was not heavy.

#5 Dale's 1-1/2 lb white, whole wheat, quinoa loaf:

1-1/4 cup warm water
1 TBSP molasses
1-1/2 TBSP extra virgin olive oil
No lemon juice
1 tsp salt
1 TBSP dry milk
2-3/8 cup bread flour
1/2 cup whole wheat flour
1/2 cup quinoa flour
1 TBSP 'vital gluten'
2-1/2 tsp bread machine yeast from a jar

It is raining. I'm tired of painting the truck bottom, so I made bread this afternoon. I cracked one of the plastic measuring spoons. I'm sure that will be a problem later. Then I dumped the first cup of flour into the bottom of the bread machine. I hope I got it cleaned out well enough. The vacuum cleaner and canned air helped.
The loaf fell very slightly, because of too much water and yeast.
It had a nice color and taste.

7/8 cup water
1 TBSP extra virgin olive oil

1 cup all-purpose flour
1/2 cup unground quinoa

Today's adventure is a mixed flour test loaf, hopefully not too dense. This one is going to be interesting. I'm using-up some ingredients. The initial mix was too wet. I had to stop and add stuff 3 times. Don't do that. Alas, this was not a good one. For probably many reasons, it came out like a birdseed cake. Hope they enjoy it.

2 TBSP multi-grain cereal flour

Today's adventure is a white flour test loaf to see if I can make a less dense loaf. I still included multi-grain cereal and a bit of quinoa. I'm happy with the texture and taste of this loaf. Because of the molasses, olive oil and non-wheat grains, the color was very nice.
Because coffee this morning still has a slight quinoa aftertaste, I've been instructed that the coffee mill is no longer available for my bread projects.

Today's adventure includes quinoa and no white flour. I found the ingredients I wanted at Lakewinds Natural Foods. This loaf came out dense, even bricklike. The recipe needs work. Tastes OK.
Even though I thought I had cleaned the coffee mill really well, coffee the next morning had a quinoa aftertaste.

#1 Dale's 1-1/2 lb oat-whole wheat loaf:

1 cup water
2 TBSP extra virgin olive oil
2 TBSP molasses
1 TBSP liquid condensed milk
1/2 cup oat bran
1-1/2 cup all-purpose flour
1-1/2 cup whole wheat flour
1 tsp salt
2-1/2 tsp bread machine yeast from a jar
I forgot to add vinegar or lemon juice.

'Making' bread has been on my list for several months. Yesterday, I went to Cub to find some quinoa (KEEN-WA) flour. Failing that, I bought a half cup of oat bran, 5 pounds regular whole wheat flour, and bread machine yeast in a jar. I didn't have a specific recipe in mind, but used the recipes I had as a guide. The loaf came out OK. It rose properly and was dense, but not heavy.

Too many ingredients?

Unlike large, commercial bakeries, some local bakeries list as few as 5 ingredients. Note that the recipes above contain no added cellulose fiber, polydextrose, cultured dextrose, calcium sulfate, stevia, ethoxylated monoglycerides or diglycerides, soy lecithin, calcium carbonate, monocalcium phosphate, or artificial flavorings. Compare to supermarket bread.
