Bread Machine Test Recipes-Phase 2
Objectives
Phase 2 of this project gradually reduces the wheat in my recipes, until there is no wheat. Coincidentally, I'm gradually reducing the wheat in my diet. 'Wheat' includes, einkorn, emmer, kamut, spelt, semolina, durum, and bulgur. Even regular corn flakes contain wheat.
The wheat content of my first recipe, test recipe #64, is reduced to 2 cups, or 80%.
Phase 3 will explore gluten-free recipes, by gradually reducing the gluten in my recipes to zero.
Action Plan
Discover how to reduce the wheat content to zero.
Substitute other gluten flours (barley & rye), then non-gluten flours.
Will probably need to add xanthum gum and guar gum because of reduced gluten.

Experimental observations and conclusions:
Bulgur works fine as a substitute for cracked wheat.
Milk makes the crust darker.
I have been disappointed with the results when more than 1/5 of the flour was oat flour or rolled oats.
I have been disappointed with the results when more than 1/5 of the flour was barley flour. Too much barley makes the bread harder, like a cracker.
Using zanthum gum with gluten flour doesn't appear to provide any benefit.
Using baking soda with yeast doesn't appear to provide any benefit.
Reducing the wheat ratio may require more liquid.
This is my journal. Many of the recipes are OK. The 5 star recipes are the best.

Machine is set to Rapid, Medium. Similar to #88. Tastes good. Did not rise enough. Whatever the problem is, milk did not solve it. Try Basic Bread cycle next.

Machine is set to Rapid, Medium. More yeast, less barley worked. Tastes great. Rose enough, but has bumpy top. I want to try this recipe with the basic bread cycle, then with a little xanthum gum. I will also try baking powder, which I don't think will matter. Maybe some rice.

Machine is set to Rapid, Medium. Tastes good, but didn't rise enough. Settled a little while baking. This much barley makes it a little cracker-like.

Machine is set to Basic Bread, Light. Didn't rise much. With a heavy heart, I threw away the last 3 slices. Is my yeast bad? No, yeast worked fine in test loaf #72. Maybe xanthum gum and gluten can't be used together?

Modified Bob's dark mix kit. Dough is more like a cake mix or a souffle.

2 tsp bread machine yeast from a jar
Machine is set to Basic Bread, Medium. Tasted interesting. Looks like pumpernickel. Heavy. Got 9 slices, counting heels. Some of the bread stuck to the mixing blade for the first time. This was a one time thing.

Machine is set to Basic Bread, Light. Loaf is dense. Only got 6 slices. 40% is too much oat stuff. Not enough salt?

Looks like I won't have to write a book about this topic. I've found an excellent one that applies to both this phase and the next, Gluten-Free Baking Classics for the Bread Machine by Annalise Roberts. Her advice includes 'Avoid rice flour'.
Test Recipes-Phase 1
Phase 1 consisted of my first 63 test recipes. It began with loaf #1 on June 18th, 2011, and concluded with loaf #63 on December 3rd, 2011.
