A step by step guide to better, faster bread

Many years ago, we acquired a Toastmaster 1197S bread machine. We started out with prepackaged 'bread kits'. Then we tried the basic bread recipes in the instruction guide, with some success. Later, I tried a 3 ingredient beer bread recipe that came out so bad, even the squirrels wouldn't eat it. The novelty wore off and the bread machine went to the basement for a decade and a half. Bread making went back on my list during our recent Portugal trip, because of the very fine bread we enjoyed there. I would describe bread making in Portugal as an art form.
